Chef’s Background & Culinary DNA

Executive Chef Mickael Do Van has built his career through Michelin-starred kitchens, five-star hotels, and prestigious international hospitality groups, including Hôtel de Crillon, Four Seasons Hotel George V Paris, L’Ambroisie, and Mandarin Oriental properties across Asia.

Over the years, he has worked alongside respected chefs such as Bernard and Mathieu Pacaud, Éric Briffard, Jacques Cagna, and Dominique Bouchet, experiences that helped shape a strong culinary foundation rooted in discipline, precision, and excellence.

Later, as Founder, Executive Chef, and Concept Creator of ADKT Los Angeles, he developed a more personal culinary identity, combining classical French technique with a contemporary sensibility and international influences.

His cuisine is defined by elegance, balance, and clarity, blending the structure of French gastronomy with the refinement, precision, and subtlety of Asian inspiration. The result is a style that is modern, sophisticated, and deeply personal.

Chef  Do van Vision

His cuisine reflects a dialogue between heritage and modernity, where delicate execution meets a thoughtful reinterpretation of the classics.

“I like to work with legacy to reshape and reinvent the classics by playing with flavors, histories, and expectations.
Each plate is an opportunity to explore the familiar and reimagine it in a way that feels contemporary, elegant, and surprising.”

He has also played a key role in the opening of exclusive destinations as Executive Chef and Consultant, notably La Guérite in Cannes and Rampoldi in Monaco.

His cuisine is marked by delicacy, precision, and a strong sense of heritage, reinterpreted through a contemporary lens.

He has further crafted bespoke culinary experiences for private clients during prestigious international events, including the Formula 1 Grands Prix in Monaco and Miami, serving a discerning clientele of notable figures and celebrities worldwide.

From Monaco, Saint-Tropez, and St Barthélemy to Ibiza, London, New York, Miami, Los Angeles, Hong Kong, and Singapore, his work reflects an international presence shaped by luxury hospitality and private dining at the highest level.
